Pink Fizz: Non-Alcoholic Strawberry Cocktail

It isn’t often that I allow myself to wonder what I could do with a punnet of fresh strawberries other than plant them straight into my face. Yes, I believe that they are perfect, just the way that they are. In spite of myself, their gamine blush reminds me of Betty Boop; of Strawberry sponge cake with lightly whipped cream; of spiked daiquiris and day time tipple and a strawberry flavoured lipgloss that my aunt had. Food memories are a real thing, folks. Entertaining them is one of life’s pure joys.


No, my meander does not take away from the fact that it also reminds me of a family holiday to the UK when I was a child. I remember picking (and covering my face in) strawberries during the English winter. It was one of those Anne-Of-Green-Gables moments that I crave. Perhaps I was a country mouse in a previous life…

This incarnation is a slightly more chilled option. It’s still packed with true fruity strawberry flavour but it’s mixed with some coconut cream and sparkling water. So imagine this – luxurious berry cream with effervescent bubbles that dance over the tongue. It isn’t often that such fresh flavour can be achieved with such ease. The result? Flashes of fancy pink!

I decided to play with strawberries because they’re in season in the winter territories. Being their time to shine the fruit is fleshy and effortlessly flavourful. With that in mind, you may want to test this out without the sugar. 

Pink Fizz

Serves 2
Preparation time: all of 10 minutes, at most.

Ingredients:
100g fresh strawberries, hulled
2tsp brown sugar
2T ruby grapefruit juice
2T coconut cream
±200ml Sparkling water

Method:
With a hand blender, blitz the strawberries, ruby grapefruit juice and brown sugar together. Once blended, mix in the coconut milk. To serve: divide the fruit mixture between the glasses, top up with sparkling water and stir to get that frothy top. Garnish with fresh strawberries.
