It is here where our IHS Culinary students make wonderful culinary treats for all the attendees and they are extremely fortunate to get to work with a great South African Brand,  Mediterranean Delicacies. Seared Steak::

200 g Sirloin Steak

Mediterranean Delicacies Basil Pesto

Mediterranean Cous Cous Salad::

100 g Cous Cous

50 g Butternut

50 g Red Onion

50 g Green Pepper

20 g Mediterranean Delicacies Danish Feta

50 g Cherry Tomato

200 ml Chicken/Beef/Vegetable Stock (pre-made)

Mediterranean Delicacies Cavi-Art (Red/Black Seaweed)

Method::

Place Cous Cous into a mixing bowl, cover with stock of choice. Do not forget to keep an eye your Cous Cous, it will absorb large amounts of liquid and can become soggy.Cook the Vegetables to al dente

Boil / roast the butternut.
Pan-fry Onion and Pepper.
Quarter the tomatoes and pan fry or leave raw if preferred.

Heat a heavy base frying pan to a medium heat. Season the steak with salt, pepper and basil pesto to create a crust. Sear each side and cook to preferred temperature (Rare – Well done). Set aside and allow to rest.Assemble Cous Cous salad by adding the desired ingredient ratio.Plate up and enjoy!
