Introduction

This programme is aimed at all people involved with the service of coffee. This includes coffee bars, coffee houses, cafes, hotels, bars and restaurants. Learners will be introduced to the full range of products used in making beverages. They will learn where the products come from, and some of the processes they go through, from growing the beans to the final coffee. They will also learn the importance of taking care of the products in order to provide exceptional coffee.

This programme also looks at the full range of equipment, identifies safety aspects and how to operate the equipment to deliver the desired drink quality. Learners will bring together the knowledge and skills acquired to produce good quality drinks consistently.

Course Outline:

  • Provide coffee and drink service information in accordance with organisational requirements.
  • Prepare and serve coffee and drinks in accordance with organisational requirements, in a hygienic, proficient and systematic manner.
  • Prepare coffee and drink machines/equipment in a hygienic, efficient and systematic manner.
  • Define Barista.
  • Describe the physical layout of the organisation as well as the services and facilities available.
  • Understand the importance of being able to provide customers with appropriate information and understand his/her role as a representative of the organisation.
  • Understand the importance of maintaining good personal health and hygiene at all times.
  • Understand the importance of a professional appearance when dealing with customers.
  • Interact verbally and non-verbally with others.
  • Understand the importance of clear, audible verbal communication with both internal and external customers.
  • Operate a cash register, process payments efficiently as well as performing cashing up and hand over procedures.
