Our students at the International Hotel School are very skilled at making gourmet pizzas as part of their culinary training, but when it comes to making themselves a few dishes on a student’s budget, that’s where a little culinary ingenuity comes in. This Pizza Muffin recipe from StudentRecipes.com is a great way to get a delicious and healthy meal on a budget (and put together in less than 10 minutes) without feeling like you’re scrimping on the gourmet side of life. We hope you enjoy!
Prep Time: Just a couple of minutes, promise
Cooking time: 5 minutes, tops
The tools you’ll need to create this masterpiece:
- Knife
- Grater
- Oven (if you don’t have access to an oven, you can use a toaster to toast your muffins, then add your topping afterwards)
Ingredients:
- English muffins, halved (Woolies sells 4 in a pack for R14.95)
- 2 Tablespoons of tomato puree
- A handful of grated cheese (cheddar or mozzarella)
- 3 or 4 sliced tomatoes or cherry tomatoes
- And then you can go crazy with any other topping you like – leftover cooked chicken, ham, sausage, pesto, onions, mushrooms, and peppers….go wild.
Our personal favourite for the topping is cherry tomatoes, bacon bits, mushrooms, a few slithers of onion and some grated Mozzarella cheese – not as economical, but definitely a crowd pleaser. Don’t forget to add a little salt and pepper to season.
And…begin cooking:
- To begin with, turn the oven on to GRILL (that’s pretty much the hottest it can go)
- Add a dollop of tomato puree to each of the muffin halves
- Add your toppings and end off with the grated cheese on top of your topping.
- Place under the grill for 5 minutes or until the cheese is melted
- Add salad or fries and enjoy with friends
