Patisserie Programme

  • 6-month programme
  • Minimum entry requirements: City & Guilds Diploma in Culinary Arts or Grade 11 with relevant industry experience
  • Two intakes per year: January and June

This exciting programme will provide the knowledge and experience to move effortlessly between the most basic puff pastry to complex plated desserts. Covered in the programme is cake-baking, decorative cake-icing, desserts and basic bread-making.

This programme structure includes theory and practical cookery lessons, with 10 weeks spent in bakeries, restaurants or hotel patisserie kitchens, gaining knowledge and work integrated experience from the industry experts.

Upon successful completion of this programme, graduates will receive:

  • City & Guilds Diploma in Food Preparation and Cooking (Patisserie)
