Culinary Arts Programme
This 1 year intensive cookery programme provides students with the relevant theory, background and practical cooking skills ideal for those wishing to make their career in the field of professional cookery. Students have an option to do an additional 2nd year in either Patisserie (6 months), or the Advanced Diploma in Food Preparation and Cookery Supervision (6 months), or both. The programme is offered in our Cape Town, Durban and Sandton campuses and work experience takes place at leading restaurants and hotels in the greater Cape Town, Durban, and Johannesburg areas.
City & Guilds Diploma in Food Preparation and Cooking (Patisserie)
This exciting programme will provide the knowledge and experience to move effortlessly between the most basic puff pastry to complex plated desserts. Covered in this programme are cake baking, decorative cake icing, desserts, and basic bread making. Based on well-established apprenticeship principles, a Traineeship is an alternative to full time tertiary education.
